Kachi Ghani Process
Kachi Ghani is a traditional oil extraction method where mustard seeds are pressed slowly to draw out oil naturally. This slower process helps the oil retain its strong aroma, natural pungency, and full-bodied mustard character.

Storage Info
Store in a cool, dry place away from direct sunlight. Keep the bottle tightly closed after use. Natural colour and aroma may vary slightly from batch to batch because mustard seeds are an agricultural ingredient.
Tempering (tadka)
Heat mustard oil in a pan until it just starts to smoke, then reduce heat and add your tempering ingredients (mustard seeds, curry leaves, dried chillies). The "smoking" step removes the raw bite and allows the oil's flavour to fully develop.
Pickling (achaar)
Kachi Ghani mustard oil is essential for traditional Indian pickles. Its natural preservative properties and pungency create the authentic flavour that refined oils cannot match. Use generously — the oil acts as a preservative, not just a flavour carrier.
Bengali cooking
Use raw or lightly heated as a finishing oil for Bengali preparations like shorshe maach (mustard fish) or aloo posto. The raw pungency is part of the flavour profile in Bengali cuisine.
Storage
Store in a cool, dark place. Best used within 6 months of opening. The natural sediment that settles is normal and not a sign of spoilage — shake gently before use.

Returns
